Frozen Yoghurt Bark

Serves 16

Ingredients

1.6 lbs. (720g) full-fat Greek yogurt

2.7 oz. (80ml) honey

1 tsp. vanilla extract

4 strawberries, thinly sliced 3.2 oz. (90g) granola

2 tbsp. pistachios, crushed

What You Need To Do

Line a 10x15" (25x38cm) sheet pan with baking paper or aluminum foil.

In a medium bowl, stir together the yogurt, honey and vanilla extract. Pour the mixture onto the sheet and spread into an even layer.

Sprinkle the top with the thinly sliced strawberries, granola and crushed pistachios (or the toppings of your choice).

Freeze for 3 hours, then break or cut into pieces and serve.

Store the pieces in a sealed container in the freezer for up to 2 weeks.

Topped with fresh lettuce, cheese, and your favorite burger fixings, all wrapped in a soft taco shell, they are a perfect fusion of flavors and textures. Ideal for a fun and casual meal that’s sure to please burger and taco lovers alike!

Ingredients

4 tbsp. mayonnaise

1 tbsp. tomato ketchup

1 tsp. Dijon mustard

1-2 dill pickles, diced

½ tsp. hot sauce

1 lb. (450g) 95% ground beef

1 tsp. sea salt

½ tsp. ground black pepper

4 (6”/15cm) corn tortillas

2 slices cheese, cut in half lengthwise

2.7 oz. (75g) shredded lettuce

1.2 oz. (35g) onions, diced

What You Need To Do

  1. Place the mayonnaise, tomato ketchup, mustard, dill pickles and hot sauce in a small bowl, stir to combine and set aside.

  2. Heat a skillet over medium-high heat.

  3. Season the beef with salt and pepper and divide into 4 even-sized portions. Form burgers with your hands, then place on the hot pan and cook for 2 minutes. Place a tortilla on top of each beef burger and press down to flatten the beef into the shape and size of the tortilla.

  4. Cook for a further 2-3 minutes, until the tortilla is golden brown. Flip each patty over and top with cheese. Once the cheese has melted, and the tortilla has lightly browned, top with lettuce and onions.

  5. Drizzle with the sauce, then remove from the skillet and fold in half like a taco. Serve immediately. Enjoy!
