I made these delicious mini crepes one morning for morning tea. I was craving something different, but not a full meal. Something that was good for my digestive system too! Chia seeds were the first ingredient I pulled out of my whole foods pantry. I always make chia pudding and generally they are best with a soak overnight. Anyway, I went with the flow and out came these crepes! They are super simple and only required three-four ingredients!
